Shepherds Pie
Shepherds Pie

As the weather gets cooler this hot & healthy treat is sure to heat you up!

Ingredients:

500g lean beef mince
800g chopped tomatoes
150g tomato paste
2 carrots peeled and diced
2 zucchini diced
8 button mushrooms
1 onion diced
1 tsp minced garlic
1 tsp soy sauce
2 tsp Sweet chilli sauce
2tsp tomato sauce
1 tsp mixed dried herbs
4 large potatoes peeled and boiled
150ml light evaporated milk
2 tsp oil spray
1/2 cup low fat grated cheese

Method: preheat oven to 180 degree celsius
place mince, tomatoes, tomato paste, carrots, zucchini, mushrooms, and onion in a large bowl and mix well. 
Combine garlic, sauces, and herbs and add to mixture.
season with pepper. Mash potatoes and add evaporated milk and margarine, mash until mixture is smooth. Lightly spray large lasagne dish with spray oil. Place meat and vegetable mix into the dish spread over the top with mash potato, and sprinkle with cheese. Bake for 50-60mins or until cheese is golden. 

Serve hot with a salad or lightly steamed vegetables
