This workshop suits those interested in learning the fundamental of what in Italy people call "primi piatti" or first dishes.
This part of the meal comes after the entrée and before the main course which, in Italy, is called "secondo".
The most popular primi piatti in Italy, regardless of the region you find yourself in, are based on Rice, Gnocchi and Fresh Pasta,
At the end of this workshop, you will be able to prepare from scratch, the traditional Potato Gnocchi, Risotto and Fresh Pasta dough. You will be able to create and duplicate and recipe for risotto. You will master the technique on how to make perfect Gnocchi all the time, thanks to a chef's trade secret. You will also familiarise with the most popular shapes shapes made with fresh pasta like, Tortellini, Ravioli, Tagliatelle, Lasagna sheets etc...Each of this methods will be accompanied by a lovely traditional sauce which our chef will teach and demonstrate for you.

Delicious Italian's mission is to provide you with the best understanding and in-depth knowledge of Italian Regional Cuisine. During our classes, you will learn authentic Italian recipes (as are cooked in Italy) rather than modified or improvised ones. We offer you an overview of the dishes from an historical point view as well as a nutritional one. Our chefs are born, raised and trained in Italy to ensure you with the most authentic of experiences. We offer hands on classes and demonstrations.
Andrea Montefusco is the founder of Delicious Italian and has more than 20 years of experience in Italian Cuisine. He trained in Naples, Italy and graduated at the prestigious Duke Ippolito Cavalcanti cooking school and worked in Italy as a chef for over 10 years across many regions around the Italian peninsula. His passion for and his expertise in Italian Cuisine allowed him to work in 4 different continents in structures ranging from city hotels to tropical resorts to exclusive mountain chalets. Andrea has a wealth of knowledge in nutrition and food chemistry which he loves to share during his cooking classes.Currently provides food consultancy to well known food brands and can be often seen in media events and live cooking shows across the country. Andrea is also resident-chef at the popular LG kitchen at the South Melbourne Market in South Melbourne.
